Baba Ganousch

Also called in Lebanon moutabbal (pronounced “mtabbal”; the use of this term is often related to the addition of yogurt), is an eggplant puree. This dish is based on eggplant (previously grilled), prepared in mousse, mixed with tahini (sesame cream) and the classic garlic, lemon, olive oil, which are the basic ingredients of Middle Eastern cuisine.
