Halloum

Halloumi is a firm, brined and slightly elastic Cypriot cottage cheese, traditionally made from a mixture of goat’s and sheep’s milk, although nowadays cow’s milk is also used. Its texture is similar to that of mozzarella or thick feta, except that it has a strong, salty flavor soaked in canned brine. Cooking Halloumi removes all its salinity and gives it a creamy texture.
